Aila, operating within Fairmont Quasar Istanbul and featured in the Michelin Guide's recommendation list, hosted a Four Hands Dinner on the evening of August 14, bringing together two different culinary approaches at the same table. Aila's Executive Chef Kemal Can Yurttaş and Serkan Aksoy, Chef of the one-Michelin-starred Nicole Restaurant, explored seasonal ingredients with different techniques and interpretations on a menu prepared exclusively for this night.
On a night accompanied by live music, gastronomy, presentation, and the dining experience were curated together. ID Fine Porselen sponsored the event, while guests were gifted Plantwise products made from chicory root.
Two Different Culinary Approaches in a Six-Course Menu
The evening's menu began with two amuse-bouches: herbal gaygana and shrimp tartare, along with çiğ köfte 2.0. This was followed by melon and fennel soup.
Balıkesir lamb chops formed the main course of the menu, which included sweet corn as an intermediate hot dish. The evening concluded with Aila's sütlaç. Thus, Yurttaş and Aksoy brought together their own techniques and culinary approaches in different stages of a single menu.
Chefs from Two Michelin Guide Restaurants at the Same Table
Aila, operating within Fairmont Quasar Istanbul, interprets Turkish cuisine with contemporary approaches and is among the restaurants recommended by the Michelin Guide. Nicole Restaurant, where Serkan Aksoy is the chef, holds one Michelin star.
While the Four Hands Dinner concept brought together the experience of two chefs in a shared gastronomic framework for a single evening, the seasonal ingredients used formed the fundamental starting point of the menu.

The event was attended by Fairmont Quasar Istanbul General Manager Cem Akşahin and The Grand Tarabya Managed by Accor General Manager Uğur Talayhan, as well as guests from the gastronomy and business worlds.
